Italy (popularized by American GIs in WWII)

Legend has it that American soldiers in Italy during WWII diluted espresso with hot water to approximate the drip coffee they missed from home. The result is lighter-bodied than espresso but keeps those roasted, caramelized flavors intact. Water goes in first to preserve the crema.

How to make it

    Pull a single or double espresso shot.

    Heat water to around 90°C — not boiling.

  3. 3

    Pour hot water into the cup first.

  4. 4

    Gently pour the espresso over the water to float the crema on top.
