Einspänner

Vienna, Austria — 19th century

Named after the one-horse carriage (Einspanner) whose drivers needed one hand free for the reins. The thick whipped cream cap insulates the coffee so it stays hot without a lid. A double espresso in a tall glass, topped with a generous cloud of Schlagobers (unsweetened whipped cream). You drink through the cold cream into the hot, strong coffee below. Don't stir it. The temperature contrast is the entire point.

How to make it

    Pull a double shot of espresso into a tall, clear glass.

    Optionally add a small amount of sugar while the espresso is hot.

    Whip heavy cream until thick but not stiff — it should hold its shape but still be spoonable.

    Float a generous layer of whipped cream on top of the espresso — at least 2cm thick.

    Serve without a spoon and without stirring. Drink the hot coffee through the cold cream layer.
