Kalita Wave

Kalita Wave

Japan — Kalita Co.

The Kalita Wave's flat-bottomed design with three small drain holes creates a more even extraction than cone-shaped drippers, making it more forgiving of imperfect pour technique. The proprietary wavy filters keep coffee from contacting the brewer walls, which improves temperature stability. If you're new to pour over, start here.

Brew Time3–4 minutes
Temperature90–96°C (195–205°F)
Ratio1:15 to 1:17 (e.g. 15g coffee to 255g water)
GrindMedium — slightly coarser than V60

How to make it

  1. 1

Place the Kalita Wave filter in the dripper and rinse with hot water to shape it and pre-heat the brewer.

  2. 2

    Add 15g of medium-ground coffee.

  3. 3

Bloom with 30–40g of water, wait 30 seconds.

  4. 4

Pour the remaining water in 3–4 even pulses, letting the water level drop between each pour.

  5. 5

Total draw-down should finish around 3:00–3:30. The flat bed of grounds at the end should look even — that means your extraction was uniform.
