
Kopi Tarik

Coffee poured back and forth between cups at arm's length, creating froth and cooling it to drinking temperature at the same time. 'Tarik' means 'pulled' in Malay. The technique is the same as the more famous teh tarik, and skilled kopitiam staff turn it into genuine theater. The pulling aerates the coffee and integrates the condensed milk more thoroughly than a spoon.

How to make it

Brew concentrated kopi using a cloth sock filter.

Add condensed milk to one cup.

Pour the hot coffee into the cup with condensed milk.

Pull between two cups from increasing height — start at 30cm, build to arm's length. Repeat 5–7 times.

The finished coffee should have a frothy top layer and be cooled to comfortable drinking temperature.
