Coffee spiked with rum, hidden under a cap of whipped cream so the pastor couldn't smell the alcohol at a baptism celebration. When the pastor finally discovered the deception and exclaimed 'Oh, you Pharisees!' — the name stuck. A real court case in 1981 ruled that a Pharisäer must contain at least 2cl of rum, and that stirring it (which mixes the cream and reveals the smell) constitutes fraud. You drink through the cream, and you don't complain about the strength.

How to make it

    Brew a strong cup of coffee — dark roast works best against the rum.

    Add 40ml of dark rum and sugar to taste while the coffee is hot. Stir to dissolve.

    Whip heavy cream until thick but still pourable.

  4. 4

    Float the whipped cream on top — it should completely seal the surface so no aroma escapes.

    Do NOT stir. Drink through the cream. According to North Frisian law, stirring is fraud.
